What is it about Ocean Trout and Horseradish Cream that makes them such a perfect match? Here, they are beautifully presented across the plate with super-thin slices of cucumber to add a bit of crunch. A lovely little treat is the roe that hides throughout the dish and adds a pop of flavour, as well as a few squares of fried trout skin for a good hit of salt.

The whole smoked tomatoes provide a deep umami base for the Cod Brandade. The creamy cod hits you with the wonderful saltiness that makes the fish such a favourite for chefs to play with. The cauliflower ‘snow’ is a delicate element; one that adds a further dimension to what is already an incredibly powerful dish. Amazing.

A delightful take on ‘meat and three veg’, the Poached Eye Fillet shows that a great steak dish doesn’t mean 800grams served on a plank. Here, the fillet is delicately poached in beef stock to bring the juicy and tender fibres together prior to being finished off in the pan. The potato comes in the form of a light and fluffy croquette that delivers a fabulous crouch under light pressure from the knife. However the genius is the presence of porcini mushroom powder that brings a depth of flavour through its earthy tones. Anyway, it’s not a good ol’ steak dish without some peas, and the pureed version lights up the plate with a pop of green and a delightful taste of sweetness.

There are a few lovely ways to go for dessert, but Caramel Fudge with shortbread, vanilla gel, Italian meringue and orange sorbet. Creamy and crunchy, the dish delivers a wonderfully heavy sweetness courtesy of the caramel fudge. Along with the citrus hit that comes from the orange sorbet, the result is a dessert that cleanses the palate with perfect balance, leaving you ready to take on the rest of your night with a spring in your step (or perhaps that’s just the wonderful wine).
