If Canberra were a gelato flavour, what would it be?

That is the question Matteo Sassi, founder of Florence Gelato is trying to answer.

Launching at Belconnen’s new Capital Food Market this Saturday 20 January, as the former head pastry chef of Adriano Zumbo Patisserie and Canberra’s Sonoma Bakery, Matteo is no stranger to inspired flavour combinations. But this time he’s asking for a helping hand from the people who know Canberra best, the locals!

Encouraging anyone with a suggestion of what defines our city through taste, Matteo will be experimenting with flavours to bring this special gelato to life, using authentic Italian techniques and high-quality ingredients.

“Florence Gelato was inspired by and named for my hometown – a city that is home to some of the world’s best gelati. We couldn’t think of a better way to launch than by combining a little Italian creativity with all the things that make Canberra such a special place,” says Matteo

“We expect suggestions to range from the considered to the cheeky, but we’re looking forward to the creative process!”

In addition, Florence Gelato’s regular menu will focus on the classics with a modern twist – creations that combine quality Australian ingredients with Italian flavours. Expect a decadent array of gelati as well as a range of modern Italian desserts and gelato cakes within the coming weeks.
