Celebrating their fifth birthday, Ainslie’s beloved restaurant Pilot. has decided to throw a party…and with a special guest.

Hosting two sittings on Tuesday 3 October, join Pilot and their friends from Sydney seafood restaurant Longshore.

Serving a menu driven by executive chef, Jarrod Walsh’s childhood growing up by the beach, Longshore’s Modern Australian, locally sourced approach is elevated with hints of Asian flare and creatively displayed through the a la carte menu and set menus, including a ten-course snack flight.

“I grew up on the coast in Port Macquarie fishing, camping and exploring. All these things I learnt as a child, such as how to catch a fish and prepare it, play a huge part in the menu,” says Walsh.

However, this pop-up is more of a ‘best of both worlds’ kind of situation rather than a takeover event, showcasing both restaurants’ unique style and dining concepts through one succinct menu.

The seven courses will be in a similar format to Pilot’s regular menu, plated in a tasting style, however as per Pilot’s signature style, the exact dishes will not be revealed until your menu is placed in front of you on the night. But you can expect snacks galore and flavour-exploding bite-sized morsels, followed by larger main courses and dessert, with that hit of nostalgia for good measure.
