Grant Kells of Smoque is pretty excited about Australia Day. What better time is there to drag out the barbecue and explore the wonderful flavours you can get from this method of cooking?
We’ve got Grant’s recipe for a rub to go on your pork ribs. Grab a fresh rack or two from your butcher and follow the directions below.
Smoque’s Rib Rub Recipe
• 2 tablespoons garlic powder
• 2 tablespoons onion powder
• 2 tablespoons black pepper
• 1 tablespoons salt
• 2 tablespoons chili powder
• 2 tablespoons cumin powder
• 2 tablespoons brown sugar
• 3 to 4 tablespoons paprika
• 2 teaspoons cayenne pepper
Preparation:
1. Prepare your ribs by trimming any excess fat.
2. Use 2-4 tablespoons of rib rub per rack, making sure they are well coated.
3. Wrap in foil and place in oven on a lower heat about 125C (depending on oven) and cook for 2-3 hours. When the meat is easily separated from the bone, they are cooked.
4. Once cooked heat up the barbecue and smother your ribs in your chosen barbecue sauce (I recommend Smoque’s BBQ sauce available from Smoque!).
5. Set the barbecue to medium heat and chargrill on the bbq on a medium heat until all the sugar in the bbq sauce caramelises and provides a beautiful chargrilled flavour.
6. Serve immediately.
