The team behind one of Canberra’s most acclaimed restaurants, Pilot, opened a new modern eatery in Constitution Place late last year and it’s got everyone eager to get their taste.
Such and Such is an all-day restaurant with a strong focus on wine, and a place intended for both a drop-in for a glass of wine and snack or for a laid-back lunch or dinner.
Owners Ross McQuinn, Dash Rumble and Mal Hanslow are renowned for their relaxed but sharp approach to fine dining at award-winning Pilot and will keep their play on nostalgic but modern flavours and a local-leaning wine list at Such and Such.
The menu is a la carte, showcasing dishes designed to share. While following similar suit to Pilot with a regularly changing menu, the restaurant kicked off the opening with the likes of oysters, burnt shallot bucatini, whole flathead with tartare, duck with plum sauce and a choc cherry cake.
Beverage director James Dickson-Hoyle has created a fun wine list, with a focus on premium and interesting small Aussie wines, a long list of the best international bottles they can offer, and some local cult favourites. Cocktails and non-alcoholic drinks will lean towards the classics.
“With Pilot, we have created more of a destination diner, and we know people come to us for occasions and book far in advance. We want Such and Such to be a ‘drop in’ place with plenty of room for walk-ins as well as bookings, and for drinkers and diners to have a little more fun,” says Dash.
Spilling out onto the courtyard of Constitution Place, guests may choose outdoor or indoor seating with a private room available for bigger groups and special occasions.
“The room will be ‘controlled maximalism’ as our designer Mark Brook from mymymy likes to say. He’s using lighting, textures and volume to create some drama, and plenty of art and sculpture from respected Canberra folk like sculptor Scott Chaseling, ceramicist Chris Harford, furniture designer Tom Skeehan and local emerging artists curated by Grace Blake,” says Dash.
