A fail-safe broth recipe by local Alicia Xyrakis.

It’s full of immune boosting ingredients such as ginger, garlic and turmeric to help kick illness. The perfect gift to drop a unwell friend – just be sure to leave it at their letter box!

Immune boosting broth
1packet beef soup bones or of tail.
1 whole chicken or mixture of chicken drumsticks and wings.
Or 2 large flat mushrooms plus handful or button mushrooms.
2 onions
6 cloves garlic
2 carrots
2 stocks celery
1 thumb size price ginger
1 thumb size piece fresh turmeric or 2 teaspoons dry grounded
2 bay leaves
1 Tbsp salt
2 tsp pepper or pepper corns
Olive oil
Water

Chop onion, celery, carrots in half. Or as much as you need to for them to fit in the pot. Make sure you use the whole celery, leaves and all. Peel garlic cloves, ginger and turmeric and roughly chop.

Heat a little oil in a big pot. Throw in bones (or mushrooms) and let brown. Add onion and let them brown a bit. Throw in rest of the veggies, garlic, ginger and turmeric and fill pot with water. Throw in bay leaves, salt and pepper. Put the lid on and leave in a soft boil for 3 + hours. The longer you cook it the better.

Remove meat and chunky bits of veg. Pour broth through a strainer. Seperate the meat from the bone, chop up the cooked carrots and add back into the broth. Serve with a squeeze of lemon juice. Optional extras* You can grate in extra garlic and ginger before serving to give it a real extra immune boosting kick! You can also add rice, noodles and green veggies such as broccolini and bok choy.
