Menu highlights include Hokkaido scallops with Shio Koji, Jarvis Bay smoked mussel and chive oil to start; Kurobuta Berkshire pork with 63-degree Majura Valley eggs, Jerusalem artichoke and crispy serrano ham; and a  Valrhona chocolate strawberry brûlée tart dessert to conclude.
