Team Ginger are committed and passionate about hospitality, delivering beautiful, winter seasonal food matched with local wines. With the direction of chef Janet Jeffs, and the hospitality team, the kitchen work with excellent small scale local farmers including rare breed Dexter beef from her own farm. Produce is often handpicked for a morning delivery. Local fish, rare breed pork, south coast oysters, fresh water fish, sheep and goat’s milk cheese, heirloom fruit from old orchards and windfalls from local gardens arrive at the kitchen. Since moving to Canberra in the mid-nineties, Janet has fostered an open-door policy, mentoring and supporting small sustainable producers and growers in developing a local food culture.
Janet Jeffs is Director + Executive Chef of Ginger Catering at The National Arboretum. Her interest in cooking, farming and sharing passionate enthusiasm for regional, seasonal and ethical produce was manifested as a young chef with culinary legend Maggie Beer, and apprenticeship with Cheong Liew, one of the 10 most influential chefs in the world. Janet is regarded as Canberra food royalty, (scary for a republican) and was recently made a food ambassador for ACT Tourism. Janet lives in bucolic bliss on a heritage property near Braidwood where she raises rare breed beasties, gardens and plans self-sufficiency.
