One Restaurant & Bar

One Restaurant and Bar is located, somewhat conveniently, on the first floor of Canberra's Novotel Hotel in the City. Once one finds one’s way up the stairs from the hotel lobby, One Restaurant and Bar brings an immediate sense of calm from the bustle of the city below.

With heavily-wooded accents and soft fabric seats, the feeling is one of immediate cosiness and calm, while taking advantage of the natural light to ensure a social and uplifting atmosphere.

The menu, designed by Executive Chef Steven Fraser is themed in order to take the diner on a journey through the courses. The Novotel is a major sponsor of the National Gallery of Australia, and when the Gallery hosts blockbusters (which it seems to be doing with ever-increasing frequency!) Steven designs the courses to tie in with the exhibition – think French, South American or perhaps…um, cubist?

The result is a wonderful opportunity to enjoy multiple cuisines in the one, familiar venue over return visits. Certainly repeat custom is advisable, as in proper hotel style, the service is polished but friendly and providing confidence that the meal will be relaxed and effortless. As the sun sets and the crowd grows, the staff glide between tables armed with friendly banter and mouth-watering food.

The wine-list offers a broad variety of flavours, styles and regions. Everything from highlights of the local growers through to the best of French sparkling is on offer. Feature producers such as Robert Oatley occasionally run ranges throughout the menu, giving avid quaffers the opportunity to explore a range of varietals from one stable.

That’s not all, though, as One Bar – at the entry to the restaurant - offers the perfect place for an aperitif (or perhaps a post-meal digestif) One Restaurant at the Novotel is the perfect destination for visitors and Canberrans alike.
