Capitol Bar & Grill

The concept of the Capitol Bar and Grill is an Italian-influenced Chicago-style restaurant with a strong focus on the prominent wood-fired grill. The 240-seat venue is forecast to be one of the biggest restaurant openings in Canberra during 2014.

Diners of Capitol Bar and Grill will be treated to a ringside seat to the best of Australian produce, with Marchetti and Roberson hand-choosing a selection of artisan producers and suppliers to be showcased on the menu and in the kitchen.

The restaurant is part of QT Canberra, a new hotel concept by one of Australia’s premier entertainment, hospitality, tourism and leisure companies. QT Canberra is set in the iconic Canberra establishment of Lakeside Hotel. With a redesigned exterior and interior by renowned designer Nic Graham, the building will embrace new technology, distinctive art and cutting edge design.

QT Canberra has announced the appointment of Jason Roberson as Capitol Bar & Grill’s Executive Chef. In this role, Roberson will oversee the culinary operations of the restaurant, alongside the much anticipated hotel grand opening of QT Canberra.

Robertson will join Robert Marchetti - Creative Food Director for QT Hotels. They will work collaboratively in designing the à-la-carte menu for lunch and dinner, while a dedicated in-room menu will be serviced throughout guests' stays.
