Pushing the boundaries of what food should look and taste like is what Sage Restaurant owner and Head Chef Kyle Prowse is all about. Self described as ‘different and unique,’ the dishes he creates are fine fare, but taken to the max.

“We have done something different with the food and plating of it, because I wanted to get away from the stacks. We decided to go the other way, and place everything in the dish around the plate, in a way like it was a frame. So then instead of the customer having it all squashed together and having to taste it all together, they can taste everything individually if they want to. Because you get to choose, you will never get bored with it,” Kyle said.

With the menu designed to keep the imagination of the customer in full swing, and simple language used for the four main components of the dishes, it gives the waiters and waitresses a chance to interact with the customers. Something that Sage restaurant sees as being an important part of the dining experience.

A very short lived career in soccer when he was younger ensured Kyle would one day grow up to become a fine dining master. Having only owned the business since 2007, already under his guidance the restaurant has won serval dining awards in the capital.

“Winning those awards helped to put confidence back with the customer, taking over a pre-owned business was hard, especially one that had such a following. We needed to rebuild after the change over of menu and of the restaurant owner, and ever though we are a young team, it helped to build respect from other people in the industry as well.”

The 1920’s heritage listed building where the restaurant Sage now occupies, was said to be once a police station, complete with a huge cell underneath the existing kitchen floor. This however, has worked to the restaurants advantage with the stone walled room underground being a fantastic place to store red wine in the perfect temperature.

In the future Kyle would love to own a little 20 seater restaurant in the vineyards of the regions wine district, and push the limits of Australian food- but in the meantime he is happy to be serving up his fine fare to the people of Canberra.
